Burgers

Burgers, how I miss them. I have to admit, that my favourite burger of all time is the junior burger from McDonalds. I cannot remember the last time I had one, but as much as I miss them I absolutely hated the way they made my body feel. I would almost instantly have a stomach ache, I’d feel bloated and just disgusting. Yes, I realise that is directly related to my coeliac disease, but I am pretty sure that the lack of nutritional value was also making an impact.

I am happy to say, that the coeliac’s kitchen burger (topped with tomato chutney and pea shoots) is absolutely delicious, high in B12, iron and protein.. and meat free :’) This recipe makes 2 servings.

This recipe is:

  • GLUTEN FREE
  • DAIRY FREE

Ingredients

  • Lentil Patties
  • 2-4 large lettuce cups
  • Handful of Pea shoots
  • 500g tomatoes
  • 250g red onions
  • 140g brown sugar
  • 75ml red wine vinegar

Method

  • Roughly chop tomatoes
  • Dice red onions
  • On a low heat, combine tomatoes, red onions, brown sugar and red wine vinegar
  • Simmer for 30 – 40minutes
  • Whilst the chutney is cooking, put the lentil patties on a medium heat
  • Cook on each side for 6-7 minutes (depending on how you like it!)
  • Once the chutney is ready, leave it to stand for 5 minutes
  • Sit lentil burger in washed lettuce cups, and top with chutney and pea shoots
  • Enjoy!
