Rice Paper Rolls

From the moment I discovered rice paper in the supermarket, I have been hooked! I initially thought they would be extremely difficult to make, but I was wrong! Not only are they quick and easy, but they are healthy snack/lunch. I love anything savoury in rice paper… I must say fruit filling was really not my cup of tea. I’ve decided to share my favourite filling.

This recipe is:

  • Rice Paper
  • Hot Water
  • Tea towel
  • 1 whole avocado (roughly chopped)
  • 2 small carrots (strips)
  • Chia seeds (to sprinkle)
  • Handful of pea shoots

  • Pour warm water into a large bowl (enough to cover rice paper)
  • Place 1 rice paper sheet in the bowl for approximately 20 – 30seconds
  • Remove sheet from the bowl, and set it down on a damp tea towel
  • Fill rice paper with 4-6 carrot slices, chunk of avocado, 2-3 pea shoots
  • WRAP
  • After using all ingredients sprinkle with chia seeds
  • Enjoy!

  2. Awesome! Good to know! I have been intrigued by rice paper rolls for a while now, and finally bought some last week but still haven’t gotten around to using them. This all sounds very good. I’ll give them a try for dinner tomorrow! 🙂
