Quinoa Salad & Sweet Potato Fries

I have heard of ‘Quinoa Salad’ but I actually had no idea what it traditionally involved, I still don’t. But I do know my take on it, and I do know that it tastes AMAZING. I threw this recipe together last night, and I am so glad it worked! I am so excited to share it with you, and I hope you enjoy it as much as I did.

This recipe is:

  • GLUTEN FREE
  • DAIRY FREE

Serves 2

Ingredients

  • 2 small green onions (diced)
  • 250g of mushrooms (sliced)
  • 10 cherry tomatoes (roughly chopped)
  • 2 small carrots (diced)
  • 2 handfuls of peashoots
  • 1 cup of quinoa
  • 2 lentil patties
  • 2 medium sized sweet potatoes (peeled, and sliced into fries)
  • Salt/Pepper (to taste)
  • Coconut oil (for cooking)
  • 1/2 lemon

Method

  • Pre-heat oven to 200 degrees (fan forced)
  • Grease tray with coconut oil, and lay down sweet potatoes
  • Add salt and pepper to taste, and let them cook in the oven for 30 minutes
  • Rinse quinoa and add 2 cups of water
  • Cook on a medium heat, bringing to the boil, cover and let it simmer for 20 minutes
  • Meanwhile, grease skillet with coconut oil, and on a medium heat sear mushrooms, carrots and onions
  • Grease additional skillet, and cook lentil patties on a low heat for 6 minutes on each side
  • Put quinoa is salad bowl, and let it cool for 5 minutes
  • Squeeze lemon juice, pepper and salt on quinoa, and mix
  • Add mushrooms, carrots, onions, sliced lentil patties, pea shoots and tomatoes
  • Top salad with sweet potatoes
  • Enjoy!
