Doughnut Muffins

 

As a coeliac, I have learnt to to adapt to the fact that if I want a dessert I –

  1. Will have to make it myself
  2. It will most likely take 1hr+ and will be difficult
  3. The ingredients will be difficult to find, and will not be in my local supermarket

So, you do have to make this recipe yourself, however it is super easy and all the ingredients can be found at your local Coles or Woolworths (Australia).

I have listed the recipes for Cinnamon Doughnuts, Cinnamon Icing, Chocolate Doughnuts and Vanilla Icing, so you have the opportunity to mix and match.

This recipe is:

  • GLUTEN FREE
  • DAIRY FREE
  • VEGAN FRIENDLY

Doughnut Muffins 

Cinnamon Doughnut Muffins Ingredients

  • 1 cup of plain gluten free flour
  • 1/3 cup coconut flour
  • 1/3 cup almond meal
  • 1 teaspoon baking powder
  • 1 1/2 cups of almond milk
  • 1/4 cup melted coconut oil
  • 1 tablespoon ground flaxseed
  • 1 tablespoons of ground cinnamon
  • 1/2 cup of brown sugar
  • 1 teaspoon of vanilla essence

Chocolate Doughnut Muffin Ingredients

  • 1 cup of plain gluten free flour
  • 1/3 cup coconut flour
  • 1/3 cup almond meal
  • 1 teaspoon baking powder
  • 1 1/2 cups of almond milk
  • 1/4 cup melted coconut oil
  • 1 tablespoon ground flaxseed
  • 1 tablespoons of cocoa
  • 1/2 cup of brown sugar
  • 1 teaspoon of vanilla essence

Method

  • Pre heat oven to 180 degrees celsius (fan forced)
  • In a large mixing bowl, add all ingredients and mix until smooth
  • Grease muffin tray
  • Evenly distribute mixture
  • Cook for 18minutes/golden brown
  • Cool for 5 minutes prior to eating/20 minutes prior to adding icing

Icing

Cinnamon Icing Ingredients

  • 1 tablespoon of cinnamon
  • 100g of coconut cream
  • 2 tablespoons of icing sugar

Vanilla Icing Ingredients

  • 100g of coconut cream
  • 2 tablespoons of icing sugar

Method

  • Add ingredients to small mixing bowl
  • Using handheld mixer/blender and pulse until mixed well
  • Refrigerate for 20 minutes
  • Dip doughnut muffins in mixture
  • Enjoy!
