Pasta Bake

To be honest, I have not been a huge fan of pasta bake over my life. Not because I haven’t like it, or because I had a bad experience being ‘glutened’ whilst eating it, but because it just wasn’t a staple meal that we ate at home. That being said, my boyfriend loves pasta bake! So I thought it was time I mixed together something that both he and I could eat. Just a side note about this recipe – my friend taste tested this recipe and she said it was the best sauce she’s ever tasted. (Not tooting my own horn or anything…)

This recipe is:


Red Sauce Ingredients

  • 2 x medium onions finely chopped
  • 375 grams of mushrooms
  • 400grams of whole peeled tomatoes
  • 700grams of passata
  • 100g of olives (kalamata chopped)
  • 1/4 clove of garlic
  • 1/4 cup of corn flour
  • tablespoon of coconut oil (to cook)
  • oregano (to taste)
  • paprika (to taste)
  • salt (to taste)
  • pepper (to taste)

Red Sauce Method

  • Sauté mushrooms in tablespoon of coconut oil on a medium heat
  • Add onions, and sauté on high heat
  • Add olives, and bring heat down to medium
  • Add salt, pepper, garlic, spices and herbs, and stir with a wooden spoon
  • Add passata and tomatoes
  • Add corn flour and stir until dissolved within the sauce
  • Simmer on a low heat for 15 – 20 minutes

Pasta Ingredients

  • Any gluten free pasta that you enjoy the most!

Pasta Method

  • Cook as per the packet instructions

Cream Sauce Ingredients

  • 3 tablespoons of sifted gluten free flour
  • 1 1/2 cups of almond milk
  • 1 cup of water
  • 1/4 cup of sifted corn flour
  • 1 1/2 tablespoons of nuttelex
  • Salt and pepper (to taste)

Cream Sauce Method

  • In a small bowl, whisk gluten free flour and almond milk
  • In a skillet, add mixture to a low to medium heat (the mixture will begin to thicken immediately)
  • Add sifted corn flour and water directly to skillet, and mix with spoon
  • Immediately add nuttelex, and salt and pepper
  • Once mixed, turn heat off

Garnish Ingredients

  • Grated cheese of your choice (vegan, lactose free or dairy)
  • 1 whole avocado, chopped into pieces
  • Handful of spinach leaves

Pasta Bake Method

  • Pre heat the oven to 180 degrees celsius (160 fan forced)
  • Using a round/oblong tin, begin to layer your bake!
  • First topping is pasta
  • Second topping is tomato sauce
  • Third topping is cream sauce
  • Fourth topping cheese
  • Continue to layer, repeating the process, until ingredients are finished
  • You should be left with approximately 3-4 layers
  • Add chopped avocado pieces to the top layer, as well as spinach leaves
  • Cook for 15 – 20 minutes in the oven
