Chickpea Guacamole with Sweet Potato Fries

I love avocado. A little more than I should. I eat avocado almost every day. I am not sure how healthy that is. But either way, I love avocado recipes so here is another!

This recipe is

  • Gluten Free
  • Dairy Free
  • Vegan Friendly

Gauc Ingredients

  • Juice from 1/2 a lemon
  • 1 small garlic clove (minced)
  • 2 small brown onions (finally chopped)
  • 2 medium tomatoes (roughly chopped)
  • 4 scallions, finally chopped
  • 2 medium avocados
  • 750g of drained chickpeas (make sure they have been soaked over night or are drained from a can!)


  • Process chickpeas until smooth
  • Add garlic and lemon juice, process again
  • Add processed ingredients, as well as rest of ingredients, to a large bowl and mix
  • Cover and Refrigerate

Sweet Potato Fries Ingredients

  • Sweet Potatoes
  • Salt and Pepper for taste
  • 1 tbsp Coconut oil (for cooking)


  • Pre heat oven to 200 degrees celsius (fan forced)
  • Peel and cut sweet potatoes into fries
  • Melt coconut oil over a medium heat, and pour into pan
  • Add sweet potatoes
  • Sprinkle with salt and pepper
  • Put in the over, and cook for 30 minutes or until crispy
  • ENJOY!
