Chocolate Protein Pancakes

This recipe is

  • GLUTEN FREE
  • DAIRY FREE
  • EGG FREE
  • VEGAN FRIENDLY

Serves 4 (large pancakes) / 8 (small pancakeS)

Ingredients 

  • 1 1/2 cups of plain gluten free flour (sifted)
  • 1/4 cup of chocolate protein powder, I’ve used Choc Pea Princess Protein from Happy Way
  • 4 tablespoons of cocoa nibs
  • 2 teaspoons of baking powder
  • 2 tablespoons of plain white sugar
  • 1 1/2 cups of water
  • 1/4 cup of vegetable oil
  • Nuttelex (for grease whilst cooking)

Method

  • Mix all ingredients together in a large bowl, until smooth
  • On a medium heat, heat skillet
  • Using a teaspoon of nuttelex, grease pan
  • Pour in desired amount of mixture
  • Cook for 3 minutes on each side, or until browned
  • Serve with fruit and maple syrup
  • ENJOY
