Spinach and Faux Ricotta Lasagne

I am so excited to share this recipe with you all, as it is definitely one of my favourites! The sauce is finger licking good, and oh my gosh the filling.. I cannot begin to describe to you how exact this tastes to the real thing. So you must try it yourself!

This recipe makes Serves 6 and is:

 

  • GLUTEN FREE
  • DAIRY FREE
  • EGG FREE
  • VEGAN FRIENDLY

SAUCE INGREDIENTS 

  • 1 teaspoon of Coconut Oil, to cook
  • 1 Onion, finely chopped
  • 1 Clove of Garlic, minced
  • 1 litre of Plain Pasta Sauce (not passata)
  • 3 cups of Water
  • 7 Basil Leaves, finely chopped
  • 2 tablespoons of Brown Sugar
  • 2 tablespoons of Tomato Paste
  • Salt/Pepper, to taste

SAUCE METHOD

  • Add Coconut oil to skillet at a medium heat
  • Add Onion and Garlic, cook for 1-2 minutes or until translucent
  • Add Pasta Sauce, Water, Basil, Brown Sugar, Tomato Paste, Salt and Pepper
  • Bring to the boil
  • Reduce heat to low, and leave to simmer for 10 – 15 minutes whilst preparing the middle mixture
  • Remove from heat and cover until needed

SPINACH AND RICOTTA/LAYERING INGREDIENTS 

  • 200grams of Unsalted Cashews, soaked
  • 1/2 cup of Water
  • 250g of Plain Tofu, chopped into cubes
  • 2 1/2 tablespoons of Melted Coconut Oil
  • Juice from half a Lemon
  • 1 1/2 tablespoons of Melted Nuttelex
  • 4 cups of Baby Spinach, roughly chopped
  • Salt, to taste
  • Packet of Lasagne Sheets

SPINACH AND RICOTTA/LAYERING METHOD

  • Preheat oven to 200 degrees celsius (180 fan forced)
  • Using a hand held mixture, blitz Cashews, slowly adding 1/2 cup of Water
  • Once the cashews have broken down, slowly add Tofu and continue to blitz
  • Once all the Tofu has been mixed, add Coconut Oil, Lemon Juice and Nuttelex and mix
  • Add baby spinach one cup at a time, do not completely break down spinach leaves
  • In a casserole dish, cover the bottom in Sauce
  • Add 3 Lasagne Sheets
  • Layer each sheet with enough Spinach and Ricotta to cover the entire sheet
  • Layer each with an extra Lasagne Sheet
  • Layer each sheet with enough Spinach and Ricotta to cover the entire sheet
  • Add 1-2 table spoons of Sauce to each sheet
  • Layer each with an extra Lasagne Sheet
  • Layer each sheet with enough Spinach and Ricotta to cover the entire sheet
  • Layer each with an extra Lasagne Sheet
  • Cover entire dish with the rest of the sauce
  • Cook for 40 minutes, or as per the instructions on the Lasagne Sheet packet
  • ENJOY!
